Vin Santo del Chianti Classico Occhio di Pernice “Insieme”
PRODUCTION ZONE: Loc. Villa a Sesta, Castelnuovo Berardenga, 420m a.s.l.
HARVEST: end of September-beginning of October, when the grapes have reached the complete phenolic and technological maturity
VINIFICATION: The grapes are laid down on small boxes in the drying rack where they remain to dry for 6 months. Then they are gently pressed and the must after decanting for 24 hours is transferred to oak and chestnut kegs for a slow and natural fermentation.
AGING: the wine is ready after 3 years of aging in kegs, together with its madre form 1970.
ORGANOLEPTIC NOTES: has an amber color, rich and concentrated with a long persistence and enveloping aromas of bitter almonds and candied fruit, this sweet wine never ceases to amaze with ever new taste sensations. The finish is very complex and persistent. It’s perfect for a long-winded bottle aging.
SERVING SUGGESTIONS: it is ideal and surprising with blue and well seasoned cheeses, impeccable as a sweet meditation wine.
